Triple Chocolate Threat Cookies (Grain-Free)

Triple Threat Chocolate Cookies

WARNING: these cookies are highly addictive!! I kid you not these cookies are the ones that don’t sit around for too long, they are gone in no time!! If my daughter knows they are in the house, bam! Gone!

As I work on completing my first ever e-cookbook – Just Eat the Damn Cookie, I thought any good cookbook, definitely needs a serious chocolate cookie in it. I gave these cookies three different kinds of chocolate, well, because can you ever have too much chocolate in one bite? Yes, this will become a favorite in your house!

Triple Threat Chocolate Cookies

Triple Chocolate Threat

(bake at 350F)

¾ cup coconut flour
1/3 cup cocoa
1tbs baking soda
2 eggs
½ cup oil
½ cup honey
½ cup chocolate chips
½ cup white chocolate chips
1 tbsp coconut oil
¼ cup dried raspberries

Combine flour, cocoa and baking soda in a bowl. Next combine eggs, ½ cup oil and honey, once combined mix will dry ingredients. Add chocolate chips. Spoon onto cookie sheet covered with parchment paper. Bake for 10-12 minutes.

On the stove, bring a small pot of water to boil. Place a glass or stainless steel bowl on top of the pot. Make sure the water does not touch the bowl. Place white chocolate chips and 1 tbsp of coconut oil in the bowl. Stir continuously until melted. Place the melted chocolate into a plastic bag. Cut the corner of one side of the bag and drizzle white chocolate on top of the cookies. Place dried raspberries in a coffee grinder and grind until finely chopped. Sprinkle raspberry dust on top of the cookies.
