I write this post with a heavy heart. This past week brought some heaviness home for my husband, Mark, and I. Mark’s grandfather passed away on Wednesday, it was peaceful but still quite unexpected for us. He and Mark’s grandmother live close to where we do, so we got to see them quite often and spend some real quality time with them.
He was proudly Polish and with that, he had a lot of delicious recipes under his belt – he and I also had a special bond over food. He would always give me a hard time about my past-vegetarian days – even up to the last day I saw him. He was a special part of our lives, we know he is in much better place now and we will miss his presence, stories, and loud TV-watching.
To celebrate his life, here is Papa Joe’s recipe for Polish Coffee Cake – real food style to honor him and his life. He will be greatly missed and we feel so lucky to have had him in our lives. Be sure to hug the ones you love, and never forget to tell them you love them too.
Polish Coffee Cake
1 teaspoon organic, ground cinnamon
1 and 1/2 cups Coconut Sugar (like this)
2 and 1/2 cups sprouted flour (made like this)
1/2 teaspoon sea salt (like this)
3/4 cup butter, chilled and cubed
1 teaspoon aluminum-free baking powder
1 teaspoon baking soda
1 teaspoon organic vanilla extract (like this)
1 pastured egg
1 cup buttermilk (or milk)
1. In a mixing bowl using a mixer: combined the cinnamon, sugar, flour, salt, and butter until the butter is broken down and loosely incorporated in the mixture. Scoop out one cup of this mixture and set aside for the topping.
2. Now add the remaining baking powder, baking soda, vanilla, egg, and buttermilk. Mix until a batter forms. Pour the batter into a 9 x 13 greased and floured baking dish, sprinkle the top evenly with the one-cup reserved flour mixture, and bake in a preheated 350 degree oven for 20 to 30 minutes.
3. Cool completely, cut into squares, and enjoy with a warm cup of coffee.
