Yes, yes summer is winding down…but my love of Watermelon has not! I have got a great new recipe for your repertoire, Pink Watermelon Lemonade. And yes, it’s as good, if not better, than it sounds. Plus, did I mention how easy this is? It’s almost fool-proof! You need four simple ingredients and everything will come together in a pinch.
If you are looking to wow your friend and family with a fancy beverage at your next dinner party, potluck, or end of the summer BBQ…look no further. This will not only quench your thirst but also give your palette a new flavor to savor!
Here’s how you do it….
Pink Watermelon Lemonade
1 Organic Watermelon, cubed with the rind removed
6 Whole Organic Lemons, juiced
1/4 to 1/3 cup raw, local honey (or more depending on your sweet tooth)
Filtered water, if desired
1. Take your cubed watermelon and run it through a blender until it has liquefied. Pour the watermelon liquid through a strainer to get the separate the delicious watermelon juice.
2. In a small container, mix together the lemon juice and raw honey, whisking until the honey has combined well with the juice.
3. In a large pitcher, mix together the watermelon juice, lemon juice and honey. Taste. Water down if necessary and add more honey if desired.
4. Serve over ice with some lemon peel, lemon wedges, or with mint!
